About

Cooking with heart and soul

Hello, I am Alejandra Ponce de Leon — Chef Ale. Thank you for visiting my website. I am an entrepreneurial chef with a Mexican-American background. I acquired my culinary degree at Colegio Superior de Gastronomía and at Le Cordon Bleu in Paris. Now, you can find me educating, teaching, inspiring and exploring vegan, gluten free recipes and so much more. . . .

My love for cooking started when I was a little girl, reading the Disney book Button Soup. My Great-Grandma had a natural talent for cooking and I learned from her through my Mom’s recipes. My grandfather had a ranch and during the holidays I was able to spend time close to nature and would witness the transformations of it. Seeds into plants, flowers into fruits, bees making honey, cows, sheep & goats with their milk. Then after mother nature’s job, how people would strategically and scientifically create wonderful recipes: cheese, wine, marmalade, candies etc., I was very curious to learn more, which is why I decided to pursue a culinary degree.

Shortly after, I moved to Europe and spent time in Spain and France where I learned more about the art of wine, liquors, seafood, charcuterie, pastries, chocolates and more.

Career-wise,  I worked as a catering chef at Cantabria (Morelia), as a Pastry Chef at JOEL’s (Atlanta), Bellini (WTC-CDMX), Meert (Lille). I worked for Hyatt as an Executive Chef, where I developed great recipes for their restaurants and catering. I was also a Chef Instructor at Le Cordon Bleu Atlanta. Now, I host cooking classes, I can make your PARTY and all kind of events with my catering selection, as well I create customized weekly menus and craft chocolates. I recently completed certification for Wedding and Event Planning and look forward to helping you with your next gathering. I would love to be a part of your cooking-eating lifestyle. Please Don’t hesitate to contact me for more information!
